EAT YOUR VEGETABLES
Remember when momma said to eat your vegetables? Vegetables are delicious way to add variety to any dish. That’s why this Vegetable recipe will knock your socks off.
Vegetables give us important nutrients our bodies need and use daily. But sometimes, veggies don’t sound good or taste all that great. That’s probably because they need a bit more seasoning or to be paired with a complimenting veggie.
You’ll be surprised to hear vegetables were always wiped clean from my plate, mainly because my mom prepared everything from scratch and it always tasted yummy. Any food her hands touch somehow always turn out to be incredibly delicious.
One night while helping her prepare dinner, she a four different veggies in the fridge that needed to be cooked. Well, she effortlessly came up with this side idea. It was good. I loved it so much I incorporated it into our dinner rotation at home. Now we make this vegetable recipe all the time.
My mom makes this recipe differently than I do because I always add my touch to recipes. Like the shredded chicken recipe, most of my recipes happened by accident.
On a positive note, this particular vegetable recipe does not require a lot of effort for a yummy result.
INGREDIENTS
- 1 head of broccoli
- 1 head of cauliflower
- 1/2 bag of frozen spinach
- 2 tbsp of butter (melted)
- 2 tbsp of cream cheese (melted)
- Salt & Pepper to taste
DIRECTIONS
- Boil the broccoli and cauliflower until tender (*add 1/2 tablespoon EVOO-Extra virgin olive oil and some salt
- While the veggies boil, start the oven at 400 degrees
- Thawout the spinach and drain of excess water
- Once the veggies are tender, drain well and place in a baking dish
- Combine spinach and your boiled broccoli and cauliflower
- In the microwave, melt the butter and cream cheese, then pour over the veggies
- Add salt and pepper to taste
- Place in the oven for 15-20 min
- Serve and Enjoy!
Over time, I’ve learned to dress up this vegetable recipe. The veggies re-heat well and you can pair with chicken breast or baked salmon. Some days I add shredded grilled chicken to turn it into a delicious casserole. Meal prepping becomes easier and faster.
